A classic among the soft drinks in the rhubarb season is the lemonade made from the plant. Tangy, cool, fresh – it is a fruity treat on warm days. With this recipe you can easily make the rhubarb soda yourself. It's very quick and requires only a few ingredients.
Cut rhubarb into small cubes and put them in a saucepan.
Add sugar, lemon zest and 150 ml water and stir.
Bring the rhubarb mixture to a boil while stirring and simmer for about 10 minutes until the rhubarb becomes very soft.
Take the rhubarb mixture off the heat and let it cool.
Pour the rhubarb mixture through a sieve and catch the syrup in a water carafe.
Add lemon juice to the rhubarb syrup and pour it with sparkling water.
Serve the rhubarb lemonade with ice cubes.
Notes
You can adjust the amount of sugar to taste.
You can refine the rhubarb soda with fresh herbs, for example with mint.
The rhubarb syrup can be diluted with sparkling or still mineral water. I prepare the lemonade with sparkling water, which comes fresh directly from my sparkling water maker**.
